Yesterday morning was beautiful and non-snowing. I headed to the gym before picking Hubs up from work, and packed along a portable breakfast.
Lunch was some cheesy vegetable-stuffed eggplant.
I love eggplant Parmesan, but hate the prep work involved. Stuffed eggplant is a lot simpler to prepare. Just cut out and cube the middle, sauté it with a bunch of other veggies, add some pasta sauce, and then stuff it back in with some cheese and bake it all together. Yummy!
Dinner was nutty noodles with tofu!

Earlier in the day, we stopped by Dairy Queen, where this month you can buy one Blizzard and get another one for a buck. What a deal! In line, I saw their Mushroom Swiss burger, and suddenly had a hankering for a hamburger. To add insult to injury, when I dropped Hubs off at work again, he made me stop by the drive-thru and procure him not one, but two double cheeseburgers! Aargh! I stole his fries in spite.
I get paid tomorrow. Methinks it is time to do something soon with Boca burgers. I want a burger!
